I replaced puff pastry with spring roll wraps to reduce fat in sausage rolls. Best using 2 sheets, baked in a cast iron, no/low moisture cheese n pat sausage dry to prevent water seeping out. Dry vegetables such as carrots are OK. Can be frozen n reheat easily. HTH
